Morgenrot is a chalet restaurant in the meadows of Bedemie above Gressoney-La-Trinité, run by its owner, Giorgio. The kitchen keeps to the Aosta Valley: fondue chinoise, polenta concia rich with melted cheese, and zuppa alla valpellinentze, the local soup of bread, cabbage and fontina baked in the oven. The wine list stays close to home too, with labels from the Aosta Valley and Piedmont.

In winter the chalet sits in deep snow and is reached on skis during the day. For dinner a snowcat picks guests up and brings them back down again, which turns an evening meal into a small expedition. In summer it is a walk across green pastures.
